The production by cross flow microfiltration (micro and subsequent ultrafiltration, no ion exchange) guarantees the highest possible preservation and concentration of the valuable protein fractions in their natural tertiary and quaternary structure, which is otherwise lost during ion exchange. At the same time, this technology allows the lowest possible fat content and lactose-free with the highest biological value (170 according to Oser).
